If I wanted to include roses in a poem about losing somebody, which colour rose should I use? I want it to portray moving forward but forever loving the deceased person.

I’m nowhere near a rose expert, but on a few websites it was mentioned that white roses are symbols of a new beginning (aka moving forward), as well as honor and reverence, and bouquets of white roses are often used as a token of remembrance.

So they symbolize a fresh start but the permanence of memory.

I’d go with white roses, but there could always be a better color choice! :)
